About the Recipe
I usually make a lot of dressing for left overs. I like to use sourdough bread, let it get stale and then break into pieces put in a big bowl. (I did it one year with sour dough olive bread, and it was great.)

Ingredients
Celery
Garlic
Red Onions
Green Apples
Sage
Dried apricots
Dried cranberries
Cashews
Butter
Salt & Pepper
Stale sour dough bread
1 can of cream of mushroom soup or butternut squash soup
Shitaki mushrooms
Breadcrumbs
TurkeySweet potatoes
Pears
Cinnamon
Orange Juice
Cranberry Juice
Cognac
Preparation
Chop the celery, garlic, red onions, green apples and sage
Combine all into a big skillet with butter
Add salt and pepper
Add in dried apricots, dried cranberries, and cashews
Cook all together till good and brown, then add the mixture to the big bowl of broken up sour- dough stale bread
Add a can of cream of mushroom soup…and I’ve also at times added Shitaki mushrooms to the mixture. (If you don’t like cream of mushroom soup you can use butternut squash soup which is great too!)
Use your hands to mix it up into a big mush, then add bread crumbs and then put it inside the turkey or just cook it on its own with tofurky (for vegetarians, it’s great).
Add sweet potatoes and sliced pears and cook in butter in a baking pan with cinnamon, orange juice, cranberry juice, and s pash of cognac
